Winnow

Winnow is a food waste system for commercial kitchens. A camera and connected scale record what is thrown away and identify the item, while a tablet-only version and a mobile forecasting tool cover smaller sites. Results feed a web dashboard (Winnow Hub) and a forecast of how much to produce. It is sold to hotels, resorts, contract caterers, cruise lines and universities, not to small independent restaurants.

Who it is for

  • Hotels and resorts

Tracks waste per outlet and buffet, with a forecasting tool built with Hilton chefs for hotels with lighter food and beverage operations.

  • Contract caterers and large foodservice groups

Winnow Hub gives one view and benchmarking across sites, brands and regions, and the vendor says it has deployments with clients that have 100 or more locations.

  • Cruise lines and universities

Winnow lists cruise ships and universities as industries, measuring waste across galleys, halls and retail outlets.

  • Smaller kitchens on a budget

Winnow Track needs only a tablet, with no camera or scale, and Foresight runs on mobile with no hardware.

Less suited to: Very small kitchens with modest food spend. Winnow describes itself as for commercial kitchens with real food volume, such as hotels, resorts, caterers, cruise ships, casinos and retail foodservice, and prices by quote.

What it does

  • Automatic waste recording (VisionAI, Throw & Go)

A camera and connected scale identify each item put in the bin and record its weight, cost and reason with no scanning by staff.

  • Winnow Track

Tablet-only waste logging for smaller kitchens, with no camera and no scale.

  • Winnow VisionAI+

Adds menu customisation, a dedicated data specialist and customer success support to VisionAI for larger or complex estates.

  • Winnow Foresight production forecasting

Predicts how much to produce for each service at item level, runs on mobile and needs no extra hardware.

  • Snap & Go leftovers photo

A chef photographs leftovers and the AI records the weight, which updates the next day's forecast.

  • VisionPW plate waste

A motion-sensor camera measures food left on guests' plates, to show what guests did not eat.

  • Winnow Hub dashboards

Daily reports on what was wasted, why and what it cost, with a portfolio view and custom dashboards by brand, region or property.

  • Benchmarking across sites

Compares kitchens against each other so a group can share what works.

  • ESG and CSRD reporting data

Exports weight, cost and CO2e per site, date range, service and category; the vendor says each disposal is weighed and timestamped so it can be audited.

  • AI reduction recommendations

Tailored suggestions for kitchen teams on what to change to cut waste.

  • REST API

Sends waste-tracking data to third-party applications, data warehouses and custom analytics; custom links to menu, recipe, inventory or POS systems are handled on request.

  • Onboarding and chef coaching

A structured 100-day onboarding programme, coaching sessions and webinars from a zero-waste chef, and a named customer success manager.
